Pura Cepa is a green coffee innovation project based on controlled coffee processing on a microbiological level. The project looks to revolutionize the current processing techniques available to farmers at origin and deliver benefits for the sustainability of the industry, the environment where coffee grows and the people that it touches. The core principle of the project is centred around innovation in the fermentation and drying process. Coffee cherries from farms in neighbouring villages are purchased directly from the farmers and then processed in the Cañasgordas mill. For this lot, the cherry has been pre-fermented for 10 hours and then de-pulped and fermented for a further 72 hours with carefully selected bacteria and specific yeasts that enhance flavours and add unique characteristics to the final cup. We look forward to sharing this coffee with you and the unique, dark fruit flavours that are brought out by this exciting, modern production method.
